Citric Acid Trisodium Salt is a kind of white powder with a chemical formula of C6H5Na3O7. It is odorless, cool, salty, and spicy. It is stable at room temperature and in the air, slightly soluble in humid air, and weathering in hot air. It loses crystal water when heated to 150℃. It is easily soluble in water, soluble in glycerin, and hardly soluble in alcohols and other organic solvents. It decomposes by overheating. It is slightly deliquescence in a humid environment and slightly weathered in hot air. The pH value of the solution is about 8.

In the food industry, it is used as a buffer, chelating agent, nutrient supplement of buttermilk, emulsifier, flavoring agent, etc. For example, it can alleviate the sour taste of citric acid in soft drinks and prevent the rancidity of dairy products. It can be used as a thickener for cheese and meat emulsion, a gelling agent for jelly and fruit juice, and an emulsifier and stabilizer for cheese and ice cream.
