It is easily soluble in water (119.8%, 20°C), slowly soluble in glycerin, and slightly soluble in ethanol, and the aqueous solution is neutral. It is used as a nutrition fortifier (magnesium fortifier), curing agent, flavor enhancer, and processing aid. It improves the fermentation capacity, improves the flavor of synthetic sake (0.003%), and adjusts the hardness of the water.
